Sausages with porridge are prepared from a mixture of less popular meat, usually pork head meat or offal, mixed with buckwheat porridge and rice. If pork blood is added to the mixture, the sausages are also called blood sausages or black pudding. Sausages with porridge, together with sauerkraut and roasted potatoes, are a classic part of pork slaughter, which are often on the menus of tourist farms in winter.
